My 4-year-old wanted toast for breakfast. I wanted eggs. Easy, unless you're out of eggs. Spying a baguette and a tin of sardines I whipped up a tasty breakfast snack.
Melt 1 tablespoon of butter in a small pan with 1 clove of garlic cut into 3 slices.
Slice 10 little toasts from the baguette and place them on a baking sheet or other oven-safe flat surface.
Mix 1 tin of sardines into a paste with:
1 teaspoon mayo
1 pinch salt
1/2 teaspoon black pepper
1 teaspoon prepared horseradish
1 tablespoon Dijon mustard
1/2 teaspoon smoked paprika
1 teaspoon capers in vinegar
Top bread with garlic butter and toast in oven at 350 until crisp. Spread on toast and enjoy.
