Dry Aged Rib Eye Day Three Part Two

Well, it looks like I don't have to wait any longer. Beef is on the menu tonight. What a difference a few hours made. The size of the steak and the dry air in my refrigerator did the job quickly. I'll be documenting the final steps and will review the results this evening. [Note: Evening? This? Lies, all lies. I'm taking my food coma to bed now.
