Chef Sawyer
Chef Jonathon Sawyer is a proud Clevelander and a graduate of the Pennsylvania Institute of Culinary Arts. He began his culinary career at The Biltmore Hotel in Miami before working as Chef de Cuisine for his friend and colleague, Michael Symon.

Chef Sawyer owns and operates two restaurants in Cleveland, The Greenhouse Tavern, a French and seasonally inspired gastropub and Noodlecat, a modern Japanese inspired noodlehouse. Both are certified by the Green Restaurant Association.

The Greenhouse Tavern was also named one of the Top Ten Best New Restaurants in the United States by Bon Appetit. Jonathon was honored as one of Food & Wine Magazine’s Best New Chefs in 2010 and has made several national television appearances including Iron Chef America, Dinner Impossible, Unique Eats, and Best Thing I Ever Ate.

What is your favorite guilty pleasure food?

Pork Cracklin's with hot sauce... Dankos Donuts... Beer, lots and lots of beer.

What is your favorite curse word?

Motherbitch!

What is your favorite knife?

Wusthof 10" chefs knife.

Which sports franchise would you prefer to win their respective championship game? Against which other sports franchise?

Cleveland Browns against Dallas Cowboys or NY football Giants.

What would be your last meal?

Whole Roasted Chicken and JL Chave Cuvee Cathelin.

If you weren't a chef, what would you want to do?

Be a recluse, write poetry, and live off land a la Wendel Berry or Emerson.

What profession would you not want to do?

Generally I'm a pretty happy guy. I think I could find innerpeace in any profession that is rewarding.

What's your preferred hot sauce?

House Made GHT Vinegar Piri Piri Sauce or the double secret ghost sauce from GHT.

If Hell exists, what food does the devil force chefs to cook for eternity?

Cooking processed american garbage food for the masses at a fast food style environment.
