- A big-ass ribeye steak (bone-in, always, 20 or more ounces).
- Salt.
- Pepper.
- Fire.
Grill the steak directly over an intolerably hot fire (when all charcoal has turned grey-white), two minutes per side. Transfer the steak to the cold side of the grill and cover, allowing the steak to cook to medium doneness, covered, for another 7-10 minutes depending on weight.
Remember, you can always cook a steak more if it is underdone, but you can't fix over-cooked.
