Mango and Avocado Salsa
Playing around with strawberry avocado salsa recently made me miss my old favorite mango avocado salsa. That, and the abundance of ripened mangos and avocados in the house. The version pictured is missing the Jalapeños because, well, the Wee Wonder's aversion to spicy food. Next time I'm going to try it with pink peppercorn. I'll let you know.
One mango, skinned and diced
One avocado, (Haas or Pinkerton), skinned and diced
One Jalapeño, seeded and diced
1/4 Medium Onion, chopped
The juice of two small limes
Fresh cilantro, chopped
1 tablespoon extra virgin olive oil
Kosher salt
Put the cilantro in the olive oil while you prep the rest. Then mix it all together in a bowl and let it sit a while before serving. I like mine over pork chops or tenderloin. It also goes well with seafood.
