Porkpocalypse II: Caitlin's Potato Salad


My roommate makes a dilly, tangy potato salad out of red potatoes that is a crowd pleaser.

Caitlin's Dilly Potato Salad:
  • 5 lbs of boiled red potatoes, cut into 1" pieces.
  • 1/2 cups of mayonnaise.
  • 1/2 cups of buttermilk.
  • 1 tablespoon of Dijon mustard.
  • 1 cup of celery, chopped (I prefer to use only the hearts, leaves included).
  • 1/2 large red onion, diced.
  • 3-4 stalks of green onion, chopped.
  • Salt and pepper to taste.
  • Fists full of chopped, fresh dill (up to half a cup); or up to 1/4 cup of dry dill.
