Good For You Truffles


My homemade coconut ice cream wasn't good enough for dessert...

It's "too creamy" my youngest son whined... I'm pretty sure the kid just wanted me to make something else, because that ice cream was delicious.

Anyway, since he didn't want my ice cream, I decided to sneak in something healthy... (cue super-villain laugh).

Coconut Truffles:

  • About 8 dried dates.
  • About 1/4 cup of unsweetened shredded coconut.
  • A few tablespoons of unsweetened organic cocoa powder.
  • A few teaspoons of local raw honey (Buzzin Apiaries).
  • A tablespoon or two of unrefined coconut oil and 6 fresh raspberries.
Put everything into a food processor and give it a good long blitz, until it turns into a paste.

With a dab of coconut oil on your palms, roll the paste into little balls.

Roll the balls in sweetened coconut flakes.

Put the balls in the freezer for a few minutes to firm up.

My silly kids think they are eating a chocolate-y sugar treat tonight.
