You thought I'd done it all with
avocados, didn't you? Nope. The other evening we had a couple of
Pinkerton avocados in need of being eaten but they didn't really work with that evening's meal. As I was planning on using them in a
breakfast shake the next morning I started thinking about the combo of coconut milk and avocado that I use in those shakes and then I started thinking that
surely someone had made a dessert with avocado before. They had, but not with coconut milk or
green sapote fruit. I reworked that recipe a few ways and the results were some creamy puddings that were fan-tastic.
Creamy Avocado Pudding (based on a recipe found here):
1 Ripe avocado, peeled and pitted (duh)
1/2 Cup Trader Joe's
Vanilla Coconut or
Almond Beverage
1/4 Cup granulated sugar
1 Teaspoon vanilla extract*
Put it into a blender and
whip it good. I also like to do a delicious variation which adds one ripe sapote for an extra creamy texture and custardy flavor.
*We make our own vanilla extract in these parts. Got vodka and vanilla beans? Combine and leave it alone for a few months. Replace any extract that you use with an equal amount of vodka.
