Broccoli Flat Bread

The critics agree... it's good!

Broccoli Flat Bread:
  • 1 cup besan flour (garbanzo bean flour).
  • 1/3 cup rice flour.
  • 1 tsp baking powder.
  • 1 tsp salt.
  • 1/2 tsp madras curry powder.
  • 2 tbps coconut oil.
  • 1 cup water.
  • 1/2 cup fine chopped broccoli.
Mix all ingredients in medium size bowl.

Let rest for 15 minutes.

Heat a cast iron pan to medium low heat.

Pour 1/4 cup batter onto center of pan. Use an offset spatula or back of a metal spoon to spread the batter as thin as you can.

The edges will dry out and bubbles will emerge.

Lightly brush the top with coconut oil and flip.

Cook this side until slightly spotty brown.

Makes about eight 8" flat breads.
