Well, here we are, another new year. A lot of people had some pretty bad feelings about last year and I was among them.
As our friend KPH stated so eloquently today:
What DOES matter - at least, to me - is how sad it makes me to think that folks are looking back on the last 365 days of their lives and lumping it all into one big pile of SUCK. Were there no good moments? Was everything really terrible, every day? How much of it was circumstance, and how much was how you respond to it?No. Last year wasn't so bad, but one has to vent. And with venting, often times come with power-imbibing.
So look at the silver linings, folks, it's not all so bad. Let's all be grateful we're still still on this rock, and let's all be in this together. Here we are, let's get last years dirt off our shoulders and make 2014 happen, am I right?
Ouch. I don't feel so good. Let's dive into some serious comfort food.*
Fried Rice With Beef:
- 1 1/2 cup cooked brown rice.
- 3/4 cup chopped broccoli rapini (see, we're still working on what's in the old pantry).
- 1/3 cup chopped shiitake mushrooms.
- 1/4 cup frozen sweet corn.
- 1/4 cup frozen sweet peas.
- 1 large egg.
- 1/2 cup chopped leftover steak.
- Peanut oil.
- Sesame oil.
- Nam pla.
Heat a cast iron skillet on high heat until smoking.
Sautée the rapini and mushrooms first then set aside. You can stage everything right in your favorite large soup bowl.
Add peanut oil to skillet.
Next, crack the egg onto the skillet. Flip as if to cook over-easy then add remaining rice, rapini, mushrooms, corn, peas and steak.
Spread around skillet to evenly distribute ingredients.
Cover and fry for 7-10 minutes until rice kernels are nice and crispy. A true fried rice.
Scrape all the good stuck bits back into your bowl, garnish with sesame oil and nam pla.
* Yeah, I know. Black eyed peas, cabbage and ham hocks. I forgot to get these supplies. Next year.
Also, technically my first meal of 2014 was left-over crêpes from last night.
