Cherry Plum, Blueberry and Almond Clafouti


Cherry Plum, Blueberry and Almond Clafouti:

Preheat oven to 350ºF.
  • 1 1/4 cup milk.
  • 1/3 cup sugar + 1/4 cup sugar reserved.
  • 3 eggs.
  • 1/2 cup flour.
  • 1T vanilla extract.
  • 1/4 almond extract.
  • Pinch salt.
  • 1/2c sliced almonds.
  • 2 1/2-3 cups pitted stone fruit and/or berries. 
Blend milk, 1/3 cup sugar, eggs, flour, salt and extracts in blender or with stick blender. 

Pour about 1/3 of this batter into a 2 quart glass baking dish.

Bake this portion for 10 minutes.

Remove from oven.

Arrange fruit on top and cover with 1/4 cup of reserved sugar.

Pour remaining batter over the top.

Bake for another 35 to 40 minutes then add sliced almonds and bake an additional ten minutes.

The clafouti should be puffed up and nicely browned, but it will deflate as it cools.
