Update: Wheat Germ Your Crêpes!
A while back I'd had the (admittedly, not original) idea to put wheat germ into my waffle mix to make them more nutritious. It made some nice waffles. Today I tried it with crêpes and that worked out quite well too. Instead of one cup of white flour I used 1/2 cup white flour, 1/4 cup rye flour, and 1/4 cup wheat germ. It took a bit of adjusting to get my crêpe-making groove back, but once I had the measurements and the swirl it was all gravy ... er, crêpes.
I served them with lemon, (a tiny sprinkling of) sugar, and some roasted sweet potatoes on the side. Try it. Your body will thank you.
