Easy Cheesy Baked Gnocchi


Note: This is only easy if you buy gnocchi at the store. Make your own gnocchi at your own risk.

Another Note: Don't fall asleep before you do the dishes. They'll be covered in cheese epoxy.

That said, this is tasty and DENSE. You want this, and it comes together in no time. Here's how:

Easy Cheesy Baked Gnocchi

1 Pound Gnocchi (see above)
1/2 Cup Grated Parmesan Cheese
1 Cup Grated Cave-Aged Cheddar (or the cheddar of your choice)
1/4 White Onion Sliced Thin and Loosely Chopped
1 Generous Pinch Dried Thyme
1 Generous Pinch Dried Sage
Paprika
Dried Parsley
1 Pinch Salt
2 Tablespoons Unsalted Butter
1 Cup Milk
1 1/2 Tablespoons All Purpose Flour

1) Preheat oven to 425 degrees Fahrenheit and lightly oil an 8x6 inch baking dish.
2) Melt one tablespoon of butter in a dutch oven over low heat and add the onions. Cover and stir frequently until translucent. Remove from heat.
3) Prepare gnocchi as directed. Drain well and put aside.
4) Make a white sauce by melting the other tablespoon of butter in a medium saucepan. Add flour and whisk until combined. Slowly add the milk and whisk until thickened. Add salt, thyme, and sage. Add half of the parmesan and half of the cheddar. Whisk to combine.
5) Carefully add the gnocchi and onion to the white sauce and stir to combine.
6) Pour the gnocchi and white sauce into the oiled baking dish. Cover with the remaining cheese. Dust with paprika and bake 5-10 minutes until cheese topping is melted. Sprinkle with parsley and put back in the oven for 30 seconds or so.
7) Allow to cool for one minute and serve with a light salad.
