Blueberry Compote


As we have all experienced, leaving frozen fruit in the freezer too long eventually draws all of the moisture out, leaving the fruit dry and unappetizing and the bag filled with ice crystals. I know it's tempting to toss it, but I prefer to turn it into delicious compote.

What you need:

1/2 cup water

1/2 cup sugar (syrup works too)

2 cups frozen blueberries (plus the ice crystals surrounding them)

1 1/2 teaspoons lemon juice (I didn't have any lemons on hand, so I left this out and didn't miss it)

Bring everything except the lemon juice to a boil in a heavy saucepan and then simmer 3-5 minutes until the berries begin to burst and the liquid is reduced to a syrupy state. Stir in the lemon juice if using. Enjoy with waffles, ice cream, or both.
